味噌や醤油、納豆や酒、日本の味といえば発酵食品ですね。
Miso and Soy sauce, Sake and Natto. Fermented food represents the well-known Japanese flavors.
実は、寿司にも発酵食品があるのをご存じでしたか?
But, did you know that Japan has a variety of fermented sushi..?.
代表的な一品が、柿の葉に包み、数日発酵させたお寿司 ”柿の葉寿司”。主に西日本で食される伝統発酵食です。
"Kakinoha-Zushi" is a kind of fermented sushi that is wrapped with a persimmon leaf and preserved for days 。。 It's known for local traditional fermented food, which is eaten mainly in the west of Japan.

ネタは地方によってサーモンや鯖、鱒(ます)だったりします。発酵sushi の深い味わいを楽しめる。。。はず。まだ食べたことがないので。
Depending on the regions, salmon, trout, or mackerel are used for the sushi ingredients.
Fermented sushi features a deep, rich flavor... I think, for I haven't tried it yet.
